Knead it for a few minutes with your hands until you get a pliable, soft dough. Cover and let the dough rest for 15 minutes. When rested, knead lightly and divide into four parts. Transfer them to a floured surface and, with the help of a rolling pin, roll each one into a round pita. Shake off the excess flour. Heat a non-stick pan over medium-high heat and cook the pitas for 2 minutes per side. When they are cooked, they puff up but then their volume decreases. BURGERS Soak the bread in milk for a few minutes, then drain and crumble it into a bowl. Add all the remaining ingredients and knead until combined. Shape the mixture into oblong patties. Cook in a hot grill pan for 5 minutes per side. Fill each pita with burger, tomato, onion and yogurt or whatever else you prefer. Wrap the souvlaki burgers with parchment paper and serve. Tips Shake off the excess flour from the pita because it burns when cooked. For more flavor, before cooking the pitas, lightly brush them with oil.
