Unfold the phyllo sheets and lay them out on the work surface one at a time. Drizzle each sheet lightly with olive oil. Sprinkle with the cheese mixture and scrunch into pleats. Take each pleated sheet by both ends and place it in a greased baking tray (standard oven size). Continue the same process until all the phyllo and cheese are used. Arrange the crinkled sheets close together to fit them all. Drizzle with any remaining olive oil. In a bowl, whisk the eggs with a hand whisk, then add the milk and soda. Pour this mixture evenly over the pie and let it sit for 15 minutes so the phyllo can absorb the liquid.
