To make fluffy pilaf, use Carolina or “nychaki” rice, but before boiling, soak it in cold water for 30 minutes to 1 hour.
Rinse it very well in a strainer under running water until the water no longer runs white from starch.
For even fluffier rice, squeeze lemon juice over the washed rice to make it fluffier.
You can also sauté it in oil or butter so that the grain becomes waterproof and stays fluffy.

How much water does it need?
The rice-to-water or stock ratio is one and only: 1 to 2. That is, for every 1 cup of rice, you need 2 cups of water. However, great care is needed during boiling. The heat should be very low, and the pot covered. It boils in a small amount of liquid, but becomes very tasty and never turns mushy.
A great option for ajem pilaf, Milanese rice, or with dried fruits.
How often should I stir?
If you want your pilaf to be fluffy, stir only once or twice at the beginning. No more than that.
The more you stir, the more the rice grains break down and release their starch, and the more it thickens and becomes sticky, ending up sticking together.
How long should I boil the rice to make it fluffy?
That depends entirely on the heat intensity and the variety of rice you use. Generally, the boiling time varies and is around 15 minutes. Be careful to keep the heat low, the liquids measured, and the pot covered.
When do I know it’s ready?
When little holes form on the surface and there’s no more visible water, it’s almost ready. Then, turn off the heat, uncover the pot, and cover it with a clean folded towel. Place the lid on top and leave it for 5 minutes to absorb its remaining moisture. Then fluff it with a fork and serve while still warm. Only this way will the grains remain separate and not stick together.
How do I boil it?
It all depends on what it’s going to be used for. If it’s for a salad, then boil it in plenty of water and drain it. If it’s for pilaf, it’s better to measure the liquid and follow all the above steps.
