These quick, fluffy yogurt flatbreads are made without yeast, perfect for serving alongside salads and dips, or simply enjoyed on their own. They require no rising time and are ready in minutes.

  1. Gently warm the yogurt, an important step since the dough contains no yeast.
  2. Place the yogurt in a bowl and set it over a saucepan of simmering water (bain-marie). Heat for about 2 minutes until just warm.
  3. Stir in the salt, baking powder, lemon juice, and herbs of your choice (dill, fennel, basil, or mint work well). Mix with a spoon.
  4. Add half of the flour and stir until the flour is moistened.
  5. Add the remaining flour and mix until a soft, pliable dough forms.
  6. Transfer the dough to a lightly floured bowl, cover, and let rest in a warm spot for at least 15 minutes.
  7. Lightly flour your work surface and hands. Turn the dough out and gently press it with your fingertips.
  8. Shape into a disk about 20 cm in diameter, then cut into 6 equal pieces.
  9. Roll or press each piece into a small round about 0.5 cm thick.
  10. Heat a nonstick skillet over medium heat, without oil.
  11. Shake off any excess flour from the dough rounds and place them in the hot pan.
  12. Cook for about 1 minute on each side, until lightly puffed and golden.
  13. Remove and place warm flatbreads on a wooden board.
  14. Drizzle with olive oil and sprinkle with fresh herbs before serving.

Tips

  • The longer you allow the dough to rest, the softer and fluffier the flatbreads will be.
