Instructions

  1. Open the kataifi pastry, separating the strands, drizzle with the melted butter, and fluff gently with your hands until well coated.
  2. Divide into 12 portions and place each portion in a muffin tin, shaping it into a nest.
  3. Bake in a well preheated oven at 200°C (400°F), with the fan on, on the middle rack, for 10 minutes until golden.
  4. Place the graviera, cream cheese, prosciutto, egg yolk, and freshly ground pepper in a bowl and mix with a whisk until smooth.
  5. Spoon the mixture evenly into the baked nests and return them to the oven for another 10 minutes, until the filling sets and forms a light crust.
  6. Serve the nests topped with a little quince spoon sweet and finely chopped chives.

Tips

  • You can save time by preparing the kataifi nests two days ahead. Fill and finish baking on the day you serve them.
  • When opening the kataifi package, hold the edges and twist left and right two or three times. This helps separate the strands more easily.
