Unfold the phyllo sheets and lay them open on the work surface one at a time. Lightly drizzle each sheet with olive oil. Sprinkle the cheese mixture over the sheet, then scrunch it into pleats. Hold each pleated sheet by both ends and place it in an oiled standard-sized baking pan. Drizzle any remaining olive oil over the top. In a separate bowl, whisk the eggs using a hand whisk, then add the milk and soda water. Pour this mixture evenly over the pleated phyllo sheets and let it sit for 15 minutes allowing the phyllo to absorb the liquid.
