Instructions

  1. Sift the flour with the baking powder.
  2. Butter and flour a bundt pan, preferably 23cm (9 inches).
  3. Preheat the oven to 170°C (340°F) on top and bottom heat.
  4. Beat the butter with the sugar in the mixer for 3 to 4 minutes until the mixture becomes creamy.
  5. Add the eggs one at a time, letting the mixture absorb each before adding the next.
  6. Add the salt, vanilla, and spices.
  7. Mix the baking soda with the yogurt and add it to the batter.
  8. Add the orange juice and orange zest and beat until the mixture is fully combined.
  9. Reduce the mixer speed and add the flour with the baking powder.
  10. Finally, add the candied fruit and fold it in with a spoon.
  11. Pour the batter into the pan.
  12. Bake in a well preheated oven at 170°C (340°F), on the lower rack, using top and bottom heat, for 1 hour.
  13. Once baked, let the Christmas cake rest in the pan for 15 minutes.
  14. Then remove it from the pan and, once it has cooled completely, glaze it or dust it with powdered sugar.

Tips

  • For a fluffy Christmas cake, once the flour is added the batter should not be overmixed, or it will turn elastic and dense instead of light.
  • The pan should always be filled three quarters full with cake batter.
  • When measuring the spices by the teaspoon, they should be level, not heaping.
  • If you prefer to bake with a fan, set the oven to 160°C (320°F) and bake on the middle rack.
  • Do not remove the cake from the oven before checking that it has baked properly and set in the center.
  • Instead of glaze, you can use vanilla spoon sweet, warmed in a bain marie, and pour it over while still fluid.
  • Cover the cake with glaze only after it has cooled completely.
