  1. The ground beef must be very cold.
  2. Remove it from the refrigerator and divide it into 4 loose balls without mixing or pressing it.
  3. Cover and keep in the refrigerator until cooking.
  4. Brush a cast iron griddle or cooking surface with minimal oil. Let it heat to maximum until it’s smoking.
  5. Immediately place the loose, cold beef balls on the surface, spaced apart.
  6. Using a wide, flat spatula, press them down firmly to flatten (smashed burger).
  7. Season with salt and pepper on one side only and cook for 1½ minutes.
  8. Flip and cook for another 1½ minutes. This way the patty will remain very juicy with a caramelized, browned surface.
  9. Place 1 slice of cheddar on 1 patty, cover with the second burger and another slice of cheddar.
  10. Stack them on top of each other so the cheese melts with the heat. Make the remaining smashed burgers the same way.
  11. Cut the buns in half and toast them on the hot surface. Then spread with a little mayonnaise and mustard, place the smashed burgers on top, and enjoy them juicy and authentic.
  12. Depending on our preferences, we can add ingredients like caramelized onions, tomato, vegetables, bacon, etc.
