Place the yogurt in a bowl and set it over a saucepan of simmering water (bain-marie). Heat for about 2 minutes until just warm. Stir in the salt, baking powder, lemon juice, and herbs of your choice (dill, fennel, basil, or mint work well). Mix with a spoon. Add half of the flour and stir until the flour is moistened. Add the remaining flour and mix until a soft, pliable dough forms. Transfer the dough to a lightly floured bowl, cover, and let rest in a warm spot for at least 15 minutes. Lightly flour your work surface and hands. Turn the dough out and gently press it with your fingertips. Shape into a disk about 20 cm in diameter, then cut into 6 equal pieces. Roll or press each piece into a small round about 0.5 cm thick. Heat a nonstick skillet over medium heat, without oil. Shake off any excess flour from the dough rounds and place them in the hot pan. Cook for about 1 minute on each side, until lightly puffed and golden. Remove and place warm flatbreads on a wooden board. Drizzle with olive oil and sprinkle with fresh herbs before serving.
