      Tarama recipe

      This is the best tarama recipe. 

      It is creamy.  It is velvety.  There are a few secrets.  It is the best tarama recipe you will ever have.

      I will use potatoes for my tarama recipe but you can also use bread.

      6 medium potatoes, boiled with their skins on.

      Allow them to cool a little, peel them and put them into your blender while they are still warm.

      The secret for an excellent taramosalata is a good lighter shade tarama.  

      Add 3 tablespoons of tarama and about one-half of a large yellow onion into the blender.

      As the mixture is blending, add the olive oil in a thin stream.  And also lemon juice.  I use one large lemon, but you can make the taramosalata to your taste.

      Blend until mixture is smooth and creamy.

      Add a little chopped dill.

      Taste to see if it needs a little more lemon juice.

      Serve it with fresh bread or flat bread or along with your favorite legumes.

      It is excellent.  Believe me, it is the best taramosalata you will ever try.
