  1. Remove the shell from the shrimp’s body, leaving the head on, as it holds all the flavor.
  2. Carefully remove the intestine from its back.
  3. Heat the olive oil in a deep frying pan and sauté the onion and the whole garlic clove over medium heat for 2 minutes.
  4. Add the shrimp and sauté for 1 minute per side, until they change color.
  5. Add salt, pepper, and the hot pepper for extra zest.
  6. Deglaze with the ouzo and let the alcohol evaporate for 1-2 minutes.
  7. Remove the shrimp, place on a platter and cover them. Remember that it’s important not to overcook the shrimp.
  8. Add the brown sugar and tomatoes and simmer for 7-8 minutes.
  9. Return the shrimp to the pan and simmer for only 2 minutes with the sauce.
  10. In the meantime, cook the pasta and drain it with tongs.
  11. Add the pasta to the pan while still dripping pasta water and let it simmer in the sauce for 1 minute over high heat to glaze the sauce.
  12. Sprinkle the pasta with parsley and serve immediately.

  • For more flavor, keep the head on the shrimp. This is the secret to having an intense and vibrant flavor in your dish.
  • How to achieve the juiciest and most tender shrimp: Don’t cook them for too long. A few minutes are enough for them to release all their flavor and deliciousness into the sauce, while remaining juicy and tender. The longer you cook them, the drier, tougher, and more shrunken they will become.
  • Finish the pasta in the sauce: Your shrimp pasta will be twice as delicious this way. Cook your pasta 1-2 minutes less than the package directions and finish cooking it in the rich sauce. This way, it will absorb all the aromas and flavor.
