Roast lamb

You’ll shred whatever remains of the roast lamb – the quantity doesn’t matter, it’s the flavor we’re after, to create a whole new dish from what’s left. You’ll prepare it in a tomato-based sauce, just as described in the recipe. Choose whichever pasta you’d like for your giouvetsi: kritharaki (orzo), small hilopites (egg noodles), or even broken spaghetti – all work beautifully for a perfect oven-baked giouvetsi.
