What to do with Greek Easter leftovers
Every year, many of you ask me what to do with your Easter leftovers. I’m here to give you recipes that will help you make the most of what’s left over from the Easter table and Holy Week, turning them into new, easy, and wonderful dishes.
Roast lamb
What can I make with leftover roast lamb? The answer is a delicious lamb giouvetsi baked in the oven! Quick to make and incredibly flavorful.
This recipe is ideal for cooking the lamb left over from your Easter roast. You’ll shred whatever remains of the roast lamb – the quantity doesn’t matter, it’s the flavor we’re after, to create a whole new dish from what’s left. You’ll prepare it in a tomato-based sauce, just as described in the recipe. Choose whichever pasta you’d like for your giouvetsi: kritharaki (orzo), small hilopites (egg noodles), or even broken spaghetti – all work beautifully for a perfect oven-baked giouvetsi.
