Arrange the bacon strips on the tray and bake at 200°C (400°F) until well browned and crispy. Transfer to paper towels to drain and cool. Cut the eggs in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks with a fork. Add the mayonnaise, vinegar, sugar, salt, and pepper. Mix well. Add the finely chopped crispy bacon and the spinach. Mix to combine. Fill the egg white halves with the yolk mixture. Arrange on a serving platter and refrigerate until ready to serve. Tips If you prefer, you can blend all the ingredients in a blender for a smoother result - though the color of the filling will turn quite dark. I prefer mashing everything together well with a fork in a bowl. Simply mash until fully combined and smooth. Transfer the filling to a disposable piping bag and fill the egg whites, or use a spoon.
