Chocolate lava cake

A chocolate lava cake made with couverture chocolate and the simplest ingredients. No one can resist a slice served with a scoop of ice cream on the side.

Instructions

  1. Place all the ingredients in a bowl.
  2. Whisk together until combined.
  3. Butter a small baking pan.
  4. Dampen and crumple a piece of parchment paper, then open it out and line the pan with it.
  5. If desired, scatter a few pieces of chocolate on top.
  6. Use whatever chocolate you have on hand.
  7. Pour in the mixture and bake in a preheated fan oven at 180°C (350°F) for 15 minutes.
  8. When you take it out of the oven, it will still be quite moist.
  9. As it cools it will firm up, but the center stays molten.
