  1. Wash the zucchini and grate them on the coarse side of a box grater.
  2. Place them in a colander and sprinkle with a little salt so they release their moisture.
  3. After 10 minutes, squeeze and drain them well, either by hand or by wrapping them in a kitchen towel and twisting it tightly.
  4. Transfer to a bowl and add the onion, the spring onions, the eggs, the herbs, the cheese, and, little by little, the flour, mixing until you have a mixture that holds its shape.
  5. The amount of flour needed depends on how much liquid the vegetables retain.
  6. Shape the mixture into patties and dust them lightly with flour.
  7. It is best to salt the mixture after adding the cheese, so the fritters do not turn out too salty.
  8. Heat the oil and fry for 2 minutes on one side, then carefully turn and fry on the other until golden.
  9. Let them drain on paper towels and serve with tomato salad.
