How to Make Homemade Canned Tomatoes

Homemade canned tomatoes are a great way to preserve the taste of summer all year round, without preservatives and with full control over the ingredients. Once you’ve made your tomato sauce, there’s a simple method to store it in jars for long-term use. All you need are clean, sterilized jars.
- Fill the jars to the top with tomato sauce.
- Seal the lids tightly and place the jars upside down in a large pot.
- Lay a towel on the bottom of the pot first.
- Fill the pot with tap water.
- Bring the water to a gentle boil over low heat and simmer the jars for 20 minutes.
- After boiling, let the jars cool completely in the water.
- Store them in the pantry for up to one year.
- Once opened, cover any leftover sauce in the jar with a thin layer of olive oil and refrigerate.
- An opened jar of canned tomatoes keeps for up to one week in the fridge.
