  1. In a bowl, mix the sesame seeds and black sesame seeds.
  2. In another bowl, beat the eggs adding a few drops of water. Set aside.
  3. Cut the feta into slices about 1.5 cm thick.
  4. Pat the slices dry with a paper towel to remove any excess moisture.
  5. Dredge each slice in flour, coating all sides.
  6. Dip the floured slices into the beaten eggs, letting any excess egg drip off.
  7. Roll each slice in the sesame mixture, pressing gently so the seeds stick well. Place the coated slices on wax paper.
  8. Repeat with the remaining feta slices. Once all are coated, place them in the freezer for about 15 minutes (this step helps them hold their shape during frying).
  9. Heat enough olive oil in a skillet to cover the bottom of the pan. Warm over medium-high heat.
  10. When the oil is hot, reduce to medium and fry the feta slices for about 2 minutes per side, until golden and crispy.
  11. Transfer to a plate lined with paper towels to drain excess oil.
  12. Serve and enjoy immediately, drizzled with Greek thyme honey.
