  1. Clean the anchovies by pulling off the heads, which will also remove the innards.
  2. Rinse well and place them in a colander to drain completely.
  3. Season evenly with salt, tossing in the colander so it spreads everywhere.
  4. Place the flour in a bowl and add the anchovies in batches.
  5. Shake well to coat them thoroughly, then transfer to a colander and shake off any excess flour.
  6. Alternatively, place them in a food-safe bag with the flour, shake to coat, then remove and shake off the excess before frying.
  7. In a deep skillet, heat oil to a depth of about 2 centimeters until hot.
  8. Carefully add a few pieces at a time and reduce the heat slightly.
  9. Do not stir often. Let them brown evenly for about 2 to 3 minutes.
  10. Stir only once or twice at most, to ensure crispness.
  11. When golden brown, remove with a slotted spoon and place on a tray lined with paper towels to drain excess oil.
