  1. Heat the oil in a large deep pan or shallow pot over high heat. If you have a thermometer, aim for a temperature of 185–190°C (365–375°F).
  2. In a bowl, mix the flour with the salt.
  3. Drain the calamari thoroughly, then dredge them in the flour mixture.
  4. Take a handful of the coated calamari and place them in a fine-mesh sieve.
  5. Shake well 2–3 times to remove the excess flour and separate the rings.
  6. Carefully drop them into the hot oil in batches, making sure the pieces don’t stick together. The oil should fully cover the squid.
  7. Let them brown on one side, then turn them 1–2 times with a slotted spoon until evenly golden and crispy.
  8. Remove and place on a plate lined with paper towels to drain for 1–2 minutes.
  9. Serve hot — they’re crisp, golden, and simply irresistible.

Tips

  • Whether fried or stewed, squid needs very little cooking time. The longer it’s cooked, the tougher and more rubbery it becomes.
  • Lemon can soften the squid’s texture, so use it as a garnish only if desired.
