  1. Heat the oil in a large deep pan or shallow pot over high heat.
  2. If you have a thermometer, the temperature should be around 185-190°C (365-375°F).
  3. In a bowl, combine the flour and salt and mix.
  4. After draining the calamari thoroughly, dredge them in the salted flour.
  5. Take a handful of the coated calamari and place them in a fine sieve.
  6. Shake 2-3 times to remove excess flour and to separate the rings.
  7. Drop them into the hot oil gradually, making sure they don’t stick together as they go in.
  8. The hot oil should cover the squid completely.
  9. Let them brown on one side, then turn them 1-2 times with a slotted spoon until evenly golden.
  10. Remove and place on a dish lined with a paper towel and let drain for 1-2 minutes.
  11. Serve hot, they’re crisp and irresistible.

Tips

  • Whether fried or stewed, remember they need very little cooking time.
  • The longer they are fried or cooked, the more rubbery they become.
  • Lemon softens the squid, so use it only for garnish if desired.
