GROUND BEEF

  1. In a pot, heat the olive oil (reserve 2-3 tablespoons) and brown the ground beef.
  2. Add the onion, celery, and leeks.
  3. Sauté for 3 to 4 minutes, add the water or broth, and simmer for 15 minutes.

CABBAGE RICE

  1. In a pan, heat the remaining olive oil.
  2. Sauté the celery root and the cabbage for 3 to 4 minutes.
  3. Add them to the beef along with the carrots and scallions.
  4. Season with salt and pepper and cook over medium heat for 10 minutes.
  5. Add the rice and simmer for 15 minutes.
  6. Finally, adjust the salt and pepper, add the lemon juice, dill, and parsley.
  7. Let it stand, covered with a clean towel, for 10 minutes.
  8. Serve in deep plates with a little strained yogurt.

Tips

  • If desired, toward the end of cooking, add a little butter or olive oil for a richer texture.
