Ripe and firm tomatoes, thin cucumbers without seeds with their green peel. Wash the vegetables very well and drain them Cut the tomato into slices. Keep all the tomato juices in a bowl. Cut the cucumber with its peel into thin slices. Clean the pepper from seeds and membranes inside and cut into thin slices. Cut the onion into slices and add all the vegetables to the salad bowl with the horiatiki salad. Add the purslane and the olives. Add finely chopped capers and pickled caper buds. Sprinkle with oregano, lightly salt and mix the vegetables to start marinating. In a small bowl, put the juices from the tomatoes we cut, cut the juicy small tomato in half and squeeze it to get all its juices into the bowl. Add sea salt flakes, a little oregano and the vinegar. With a fork or a small whisk, mix the ingredients. Add the olive oil and continue whisking to combine the ingredients. Place the feta in irregular pieces on top of the salad, pour over the tomato vinaigrette and mix. Serve the greek salad with fresh baked bread. Tips For your horiatiki salad, prefer belladonna tomatoes or sun-dried tomatoes. After washing the cucumber well, always include the peel. Purslane is found only in the summer, from mid-June to mid-August, and it is wonderful. Pickled caper buds or small tender caper leaves elevate the horiatiki salad. Choose a ripe, “baked” barrel-aged feta and leave it at room temperature to release its aromas. Never put the tomato in the refrigerator. A chilled tomato in the horiatiki salad loses its aromas and sweetness. Use genuine red wine vinegar. This makes the difference in the horiatiki. The tomato juices elevate the salad dressing. Don’t omit them. Tomato vinaigrette is a simple but top-notch sauce in taste and aroma. If you buy oregano, prefer to buy oregano in dried bunches and rub it with your hands at the last moment over the salad. Its aroma takes on another dimension. Avoid ground oregano in general.
