  1. Cut the leeks into thick slices, using only the white, tender part.
  2. Heat the olive oil in a skillet and add the leeks. Cook gently over low heat for about 10 minutes until softened.
  3. Increase the heat and add the pork, cut into bite-sized pieces. Let it brown well for 10 minutes.
  4. Season with salt and pepper, then deglaze with the juice of one large lemon.
  5. Cover the skillet, reduce the heat, and simmer for about 10 minutes until the liquids are absorbed and the dish remains in its own oil.
  6. Finish by sprinkling coarsely ground red pepper on top.
