  1. If you choose fresh mussels, steam them in a pot for 2-3 minutes, then remove the meat from the shells. If you prefer frozen ones, first thaw them and drain them very well.
  2. In a wide, shallow pot over medium heat, warm the olive oil and sauté the onion and peppers for 3 minutes, until softened.
  3. Add the potato, garlic, and tomato paste, and stir until they glisten in the oil.
  4. Pour in the tomato and a little hot water, up to halfway up the ingredients.
  5. Sprinkle with a little salt and freshly ground pepper.
  6. Once the dish comes to a boil, lower the heat, cover the pot with its lid, and leave it to simmer gently for about 15 minutes.
  7. When the potatoes have softened enough, add the drained mussels and the chopped parsley, and check the seasoning.
  8. Boil for 2-3 minutes over high heat to thicken the sauce, then remove from the heat.
  9. Serve the braised mussels with the potatoes while still hot.
