Using a spoon, stir the ingredients until they come together, add the meat to the marinade, and mix very well. Cover the bowl with plastic wrap and let the meat marinate for at least 2 hours in the refrigerator, or even overnight from the day before. Stir occasionally, keep well covered, and store in the refrigerator. PORK SOUVLAKI Peel the onion and cut it into 4, then cut the pieces in half again. Cut the peppers in half, remove the ribs and seeds, then cut them in half and again into quarters. Cut the cherry tomatoes in half. Thread onto the skewers, alternating meat, onion, peppers, and cherry tomatoes. Start with a vegetable and finish with a vegetable. Once everything is threaded, arrange on a platter and season with salt and pepper. Cook the marinated pork souvlaki over charcoal or on the grill for 3-4 minutes on each side. In total they need 12-15 minutes of cooking. OVEN-ROASTED POTATOES Peel, wash, and cut the potatoes into 6. Place them in a pot, cover with water, and from the moment they come to a boil, boil for 15 minutes. They are ready when they can be pierced with a fork. Preheat the oven to 250°C (480°F), conventional (top and bottom heating elements). Drain the water from the pot and shake it so the potatoes knock against one another and develop rough edges. Spread them out on a baking sheet, drizzle with olive oil, season with salt and pepper, sprinkle with fresh oregano, and toss. Bake for 30-35 minutes, until the potatoes turn golden and crisp on the outside while staying soft and creamy inside. Tips Cook them in the oven, on the grill, or over charcoal, whichever you prefer.
