Add all the remaining ingredients except the cheese and knead very well until you have a uniform, firm mixture that’s easy to shape. Take approximately 150g (5-6 oz) of the mixture and shape into a ball. Make a well in the center and fill it with cheese. Close the seams and press with your palms to flatten. Shape the remaining burgers in the same way. SAUCE Heat the olive oil in a large non-stick pan and brown the burgers for 2-3 minutes on each side. Once they develop a nice crust, squeeze the lemon over them, sprinkle with pepper, and add hot water or chicken broth to the pan so it covers the burgers halfway. Cover the pan with a lid and cook the burgers over medium heat for 5 minutes on each side. Taste the sauce to see if it needs a little extra salt. Add the cold butter in pieces and turn off the heat. Shake the pan to melt the butter. The sauce has now become thick, bound, and rich.
