Add the wine and cinnamon. Dissolve the baking soda in the orange juice (or water) and add it to the mixture. Also add the orange zest and sesame seeds. Mix well with a whisk until all ingredients are combined. Sift the flour together with the baking powder. Add half of the flour to the mixture and knead. Gradually add the remaining flour until the dough becomes pliable and doesn’t stick to your hands. Note: Don’t knead for too long or the cookies will become hard. The total dough weighs approximately 1,200 g. Shape 40 cookies and dip them in sesame seeds and cinnamon sugar. Arrange them on baking sheets and sprinkle with brown sugar. Bake in a preheated oven at 170°C (340°F) on fan setting for 25-30 minutes or until golden brown. Tips Let the dough rest for at least 15 minutes.
