Add the olive oil (2 tbsp), the garlic, a little salt, pepper, oregano, and the balsamic vinegar. Toss to help them release their juices. Line the air fryer basket with a disposable liner and add the tomato mixture. Add the basil sprigs. Cut the feta into 3-4 pieces and distribute them over the surface. Spray with a little oil spray and cook for 17 minutes at 200°C (390°F). Peel the garlic and mash its flesh into the tomatoes. Cook for 2 minutes more. Meanwhile, boil the penne in plenty of salted water. Drain, reserving a little of the cooking water, and add the pasta to the roasted ingredients. Toss, drizzle with a few drops of olive oil and a few drops of the reserved pasta water. Finally, add the basil leaves and serve immediately on plates.
