Baked feta and cherry tomato pasta in the air fryer

A quick sauce of roasted cherry tomatoes and feta made in the air fryer, ready in the time your pasta needs to boil.

  1. Halve the cherry tomatoes and place them in a bowl.
  2. Add the olive oil (2 tbsp), the garlic, a little salt, pepper, oregano, and the balsamic vinegar. Toss to help them release their juices.
  3. Line the air fryer basket with a disposable liner and add the tomato mixture.
  4. Add the basil sprigs.
  5. Cut the feta into 3-4 pieces and distribute them over the surface.
  6. Spray with a little oil spray and cook for 17 minutes at 200°C (390°F).
  7. Peel the garlic and mash its flesh into the tomatoes. Cook for 2 minutes more.
  8. Meanwhile, boil the penne in plenty of salted water.
  9. Drain, reserving a little of the cooking water, and add the pasta to the roasted ingredients.
  10. Toss, drizzle with a few drops of olive oil and a few drops of the reserved pasta water.
  11. Finally, add the basil leaves and serve immediately on plates.
