Everyone loves fries, whether on their own or as a side dish. And when they are perfectly fried, golden, and crisp, they truly steal hearts. Here I share all my secrets for making perfect fries, every time.

Cut the potatoes to the same size

The potatoes should all be cut to the same size so they fry evenly and are ready at the same time. If some are thin and others thicker, the small ones will burn before the large ones are cooked, or the large ones will still be raw when the thin ones are done.

Remove the starch before frying

Starch is what keeps potatoes from getting as crispy as they deserve to be. That is why it is so important to soak them in water, so they release the excess starch before frying.

Dry them very well

Before they go into the hot oil, the potatoes must be completely dry. Even a few drops of water can cause dangerous spatters of hot oil.

Leave them alone while they fry

There is no need to stir constantly. Once, just enough to keep them from sticking together, is plenty.

Use the right pot

For proper frying, choose a deep pot rather than a frying pan. This way the oil heats properly and the potatoes have the room they need to fry evenly.

Fry in the right oil

Pure olive oil is the best choice, since it withstands high temperatures, burns more slowly, and gives the potatoes a unique flavor.

Double frying for perfect results

For the first fry, cook the potatoes for 5-7 minutes over medium heat, until they are soft inside but have not taken on any color. Ideally, the oil should be around 150°C (300°F). If you don’t have a thermometer, make sure the oil is not bubbling vigorously, just simmering gently.

Lift out the potatoes and let them drain. They can sit like this for anywhere from a few minutes to a few hours without affecting the final result.

For the second fry, raise the oil temperature to 180°C (350°F). Fry for about 3 minutes, until golden and crisp. The oil should cover them by at least 2 cm (¾ inch).

Once you try this method, you can be sure you won’t want to go back to the old way.
