  1. Preheat the oven to 200°C (400°F) (fan and conventional heat).
  2. Cut the eggplants into 6 pieces, the zucchinis into 6 bite-sized chunks (about 4-5 cm long) (they’ll reduce in size when cooked), the tomatoes into quarters, and the potatoes also into 6 pieces.
  3. Place all the vegetables in a large pan (34-36 cm) and mix them together.
  4. Blend the garlic with the olive oil in a blender, then pour it over the vegetables.
  5. Season with salt and pepper, and sprinkle the chopped herbs on top.
  6. Mix everything well using your hands or two large spoons.
  7. Pour the water over the vegetables. It may seem like a small amount, but the vegetables will release more liquid as they cook.
  8. Place the pan in the preheated oven. Bake covered for 40-45 minutes.
  9. Then uncover and continue baking until the vegetables are tender and nicely browned.
  10. This dish is best served warm or at room temperature.
