Instructions

  1. Heat the olive oil in a pot and sauté the onion, celery, and leeks.
  2. Add the carrots and chopped cabbage.
  3. Cook for a few minutes until the cabbage reduces by half in volume.
  4. Stir in the tomato paste and cook for 1 minute.
  5. Add the chopped tomatoes and 3 cups of hot water.
  6. Simmer over medium heat for 10 minutes.
  7. Add the rice, season with salt and pepper, and simmer gently for about 15 minutes, until the rice opens.
  8. The cabbage rice should remain juicy when finished. If the liquid evaporates too quickly, add a little more hot water.
  9. Finish with lemon juice and a drizzle of olive oil.
  10. Cover and let it rest in the pot for 10 minutes to absorb the flavors.
  11. For serving, sprinkle with chopped herbs and serve in deep plates. Enjoy it plain, or with yogurt or crumbled feta, as a wholesome meal for the whole family.
