  1. Peel the celeriac carefully and cut into small pieces.
  2. Peel the potatoes and carrots and cut them into small pieces as well.
  3. Wash all the vegetables thoroughly and drain.
  4. Place them in a medium pot and cover with water.
  5. Boil for about 25 minutes, until tender.
  6. Drain the vegetables in a colander.
  7. Blend until smooth, then return to the pot over low heat, stirring with a wooden spoon to evaporate any excess moisture.
  8. In a small saucepan, warm the butter with the milk and gradually add to the puree, stirring constantly with a wooden spoon.
  9. For a fluffier or looser texture, add a little extra milk.
  10. Season with salt and pepper, and optionally garnish with finely chopped chives.
