Brown the chicken on all sides until colored, 6-8 minutes. Add the garlic (the whole clove), the diced carrots, and the finely chopped onion. Let them cook until the onion turns translucent, 5-6 minutes. Add the tomato paste and rub it at the bottom of the pot well to release its aroma. Add the grated tomatoes, lower the heat, and cover the pot. Simmer for 50 minutes, until the chicken softens. Once the chicken is almost done, add the peas. You can also add the green beans if you like. Season with salt and pepper and pour over the remaining olive oil (1/4 cup). Cook for about 20 minutes, until the sauce thickens but the vegetables stay tender. Finally, sprinkle with the chopped parsley and serve.
