Add the olive oil and let it get hot, then sauté the peppers (Florina and colored), the onion, and the leek for a few minutes, until they release their liquid and dry out completely. Season with salt and pepper and set the mixture aside to cool slightly. In a bowl, combine the ground oats, the water, the paprika, and the eggs. Add the sautéed vegetables, the feta, and the kefalograviera and stir to combine. Grease a small baking pan, sprinkle the base with half the sesame seeds, and pour in the pie mixture, smoothing it with a spoon so it spreads evenly. Sprinkle the surface with the remaining sesame seeds. Bake the colorful pepper pie in a well-preheated oven at 180°C (350°F), fan setting, on the middle rack, for about 45 minutes, until the surface is lightly golden.
