Instructions

  1. Remove the crust from the bread and soak the slices in water with a weight on top to fully saturate them.
  2. Once softened, squeeze out the excess water by hand and place the bread in a food processor.
  3. Add the walnuts and garlic cloves and blend until completely smooth.
  4. For a fluffy texture, the mixture must be well blended.
  5. Add the vinegar and olive oil in a thin stream as the food processor runs.
  6. If the dip is too thick for your taste, thin it out with a bit of water.
  7. Season to taste with salt and adjust the vinegar if needed.

Tips

  • This dip can be prepared in a food processor or a mortar and pestle.
  • You can use walnuts or almonds.
  • Walnuts don’t need soaking, as they blend easily.
  • Use fresh, high-quality nuts. If they taste rancid, that flavor will carry through the dip.
  • Store the dip in a sealed glass container in the refrigerator. It keeps well for several days, and the garlic flavor intensifies over time.
  • If the dip becomes too strong after a few days, stir in a little olive oil to mellow it out.
