Let it sit on a rack for 30-40 minutes, until it comes to room temperature and moisture forms on the surface from the salt. Meanwhile, prepare the fire. Clean, scrub, burn off, and oil the grill grate. Push the coals to one side so you have a strong, hot zone on the grill and a cooler zone. Place the T-bone on the cooler side of the grill and cook for 5-6 minutes. Turn it over and cook for another 5-6 minutes on the other side. This way the thick interior of the steak and the central bone warm through gradually. Move the meat to the hot side of the fire and sear for two minutes on each side, until a crust forms. Turn it on its edge as well so it cooks all the way around and the heat reaches the center. Toward the end of cooking, place a piece of butter on the steak and use the herbs to baste all sides for extra flavor and aroma. Take it off the heat and let it rest, covered, for 5-10 minutes. Once the T-bone has rested, use a sharp knife to carefully separate the two fillets from the bone.
