Instructions

DOUGH

  1. First, sift the flour into a bowl.
  2. Set aside 2 heaping tablespoons and place the remaining flour in a bowl.
  3. Add the yeast and sugar, mixing with a spoon.
  4. Dissolve the salt in the lukewarm water.
  5. Pour the water into the flour and mix with a spoon until the dough comes together in a ball and doesn’t stick to your hands.
  6. Knead briefly, and if it sticks, dip your hands in the reserved flour and continue kneading.
  7. The dough should be pliable but firm, not soft. It shouldn’t stick to your hands.
  8. Place in an oiled bowl and cover.
  9. Let it rest until doubled in size, about 1 hour at room temperature.
  10. Once risen, flip dough onto the counter and knead gently to deflate.

SHAPING

  1. Shape the dough into a log and divide into 8 pieces.
  2. Form into balls, gathering the seams underneath.
  3. Place on a floured surface, cover, and let rest an additional 15 minutes to relax for easy rolling.
  4. Take one piece of dough in your hand and flatten between your palms into a pita.
  5. Alternatively, dust the counter with flour and roll to 18 centimeters in diameter using a rolling pin.

COOKING

  1. Heat a non-stick pan over medium heat and cook without oil for 2-3 minutes per side.
  2. They can also be cooked on a grill or in a sandwich press without closing the lid. Simply place on the hot sandwich press and after cooking for a few minutes, flip to cook the other side.
  3. Alternatively, oil the hot pan and cook in oil for 2-3 minutes per side.
