After washing the greens and strawberries thoroughly, dry them very well. Slice the strawberries with a knife. In a large bowl, combine the spinach leaves, arugula, and mint. Add the strawberries, cooked wheat, avocado, and pumpkin seeds. Drizzle with the strawberry vinaigrette. Toss the salad, garnish with the sprouts, and serve immediately. STRAWBERRY VINAIGRETTE Place all the vinaigrette ingredients in a blender and blend until smooth, creating a rich red, velvety strawberry vinaigrette. Drizzle the vinaigrette over the salad at the last moment before serving. Tips The salad leaves must be washed thoroughly and dried very well. Any trace of water on the greens will dilute the vinaigrette. Toss the salad with the vinaigrette at the last moment so it coats the leaves evenly and does not pool at the bottom of the bowl.
