Instructions

  1. Remove the head, innards, and central bone from the sardines.
  2. Keep the two fillets joined together (butterflied).
  3. Once all the sardines are cleaned and rinsed, leave them to drain.
  4. Blitz the stale bread into crumbs in a blender.
  5. Transfer to a bowl.
  6. Add the garlic, parsley, and olive oil.
  7. Season the filling with salt and knead the ingredients together.
  8. Fill each sardine with a little of the mixture and close it with the other fillet.
  9. Wrap each sardine in a vine leaf.
  10. Grill the sardines over charcoal for 3 to 4 minutes on each side.
  11. In a bowl, chop the cherry tomatoes and add 1 tbsp vinegar, 3 tbsp olive oil, and salt.
  12. Mix well.
  13. On a serving platter, spread the salad as a base and arrange the stuffed, wrapped sardines on top.
  14. Drizzle with the juices from the salad.
