Let the meat mixture rest in the refrigerator for a while. In a bowl, place the crumbled feta, the kefalotyri, and the parsley. Knead them together until combined. Dip your fingers in the wine. Take a portion of the meat mixture about the size of a large walnut, knead it lightly so the wine coats it all over, and shape it into an oblong soutzoukaki. Press it between your palms to flatten it. Place a teaspoon of the cheese filling on top, and close the meat around it so the seam is sealed. If the meat sticks to your hands, dip your palms in the wine and continue shaping. Heat a frying pan with a little olive oil and brown the soutzoukakia for a few minutes, a few at a time, until they form a crust. Once they are all fried, drop them into the tomato sauce. SAUCE Place all the sauce ingredients in a pot and boil for 10 to 15 minutes, until it thickens. Once the sauce has boiled and thickened, add the soutzoukakia and let them come to a boil 2 to 3 times, for 10 minutes. Check the salt and pepper.
