Baked sardines with lemon potatoes

Lemony ladorigani potatoes with roasted sardines on top, baking in their own juices until they turn out wonderful. The fish of summer: plentiful, inexpensive and extremely healthy thanks to the omega-3 fats it contains.

A meal of high nutritional value, ideal for anyone watching their weight. Sardines are a fish rich in omega-3 fatty acids, which are proven to support good heart health. They are also a very good source of vitamin D and B12. Paired with potato, you have a perfectly complete meal, and served alongside a village (horiatiki) salad, you have an ideal Mediterranean summer meal.

Instructions

  1. Clean the potatoes and, with a knife, cut them into wedges.
  2. Arrange them snugly in a small baking pan.
  3. Add the garlic, oregano, lemon juice, olive oil, salt, pepper and mustard to the pan, and mix well so all the ingredients for the baked sardines are combined.
  4. Add water to reach halfway up the potatoes (about 1 glass).
  5. Bake in a preheated oven at 180°C (350°F), conventional and fan setting, for 40 minutes, until softened.
  6. Once you pierce the potatoes with a fork and see they have softened, arrange the sardines side by side in a layer over the potatoes and let bake for another 15 minutes.
  7. If you like, sprinkle with a little finely chopped parsley when serving.
  8. Serve hot with the potatoes and their wonderful sauce.

HOW TO CLEAN SARDINES

  1. Clean the sardines: with a knife, cut off the head and pull with a sharp motion so the innards come away too.
  2. Lightly scrape the skin to remove the scales.
  3. Rinse under plenty of running water and leave them in a colander.
  4. Sprinkle with salt and keep them in the fridge until the potatoes are ready.
