Chicken fillet gives us very little fat but supplies protein of high biological value, which we need especially on calorie-restricted diets in order to maintain our protein balance. Add the yogurt, oil, and vinegar and mix well. CHICKEN SOUVLAKI First cut the chicken into small pieces and place them in a bowl. Add salt and pepper and pour the marinade over the top. Mix well so that all the chicken is coated. Cover and refrigerate for at least 2 hours (ideally 12 hours). Strip the rosemary sprigs halfway down and thread 2 to 3 pieces of chicken onto each one. Cook on a grill or a grill pan for about 5 minutes per side, until golden and still juicy. Serve with a cool green salad or with pligouri (bulgur wheat). BAKING Preheat the oven to 200°C (400°F) fan (or 210°C / 410°F conventional). Line a baking tray with parchment paper and arrange the skewers on it. Bake for 20 to 25 minutes total. Halfway through (at about 12 minutes), turn the pieces so they cook evenly. For extra color, turn on the grill/broiler for the last 2 to 3 minutes. Tips If you don’t have rosemary sprigs, thread the chicken onto metal or wooden skewers (if wooden, soak them in water for 30 minutes first).
