Garlic pasta (Skordomakarona)

A traditional Cycladic recipe for garlic pasta by Argiro Barbarigou. Spaghetti simmered in a tomato and garlic sauce. Simple, quick, and budget-friendly.

Instructions

  1. Heat the olive oil in a pot over medium heat and add the garlic.
  2. Let it turn golden in the oil for 30 seconds to 1 minute.
  3. Add the tomato paste and rub it against the bottom of the pot for 30 seconds.
  4. Add the grated tomatoes, allspice, bay leaf, salt, pepper, oregano, and the sweetener.
  5. Simmer over medium heat for 10 minutes.
  6. Remove the allspice and bay leaf.
  7. Add the hot water, and once the sauce comes to a boil, add the pasta.
  8. Cook over medium heat, stirring often, for about 8 minutes (depending on the pasta type).
  9. The pasta should be juicy yet coated in a thick sauce.
  10. Serve immediately in deep plates.
  11. If desired, sprinkle with grated dry mizithra or kefalotyri cheese.

Tips

  • Keep the heat low so the pasta cooks in the sauce without needing extra water.
