DOUGH

  1. In a large bowl, combine the flour, dry yeast, and honey. Gradually add the water, mixing until a thick batter forms.
  2. Add the salt last.
  3. Cover the bowl and leave it in a warm spot (near a radiator or the stove) for 30 minutes, until the mixture begins to rise along the sides of the bowl.

FRYING

  1. Heat olive oil in a deep pot.
  2. When shaping the loukoumades, dip the spoon in water each time to help release the dough easily into the hot oil.
  3. Shape by hand: dip the left hand into the dough, squeeze it upward, and use a spoon to scoop the portion that comes through the thumb and drop it into the oil. Alternatively, simply drop spoonfuls of batter directly into the oil.
  4. Fry for a few minutes until golden brown, then drain on paper towels.
  5. Transfer to a serving platter and drizzle with thyme honey. Sprinkle with cinnamon and toasted sesame seeds.

Tips

  • If using fresh yeast, it must be activated. To do this, dissolve the yeast in a bowl, sprinkle with a little sugar, and add a small amount of water. Stir to dissolve, cover with plastic wrap, and let sit for 10 minutes. When the surface becomes foamy, it is ready to add to the flour.
