Drain and rinse lightly with a little lukewarm water so they don’t stick. Set aside and keep warm. Husk the fresh corn and, using a sharp knife, cut off the kernels. In a deep skillet, melt the butter over medium heat, add the corn, and sauté until glossy and tender. Add the hot chili pepper, salt, pepper, and the lime zest and juice. Stir and remove from the heat. While the corn is still hot, add the grated Parmesan. Stir well until it melts. In a large bowl, combine the cooked pasta, the finely chopped bell peppers, and the corn-and-Parmesan mixture. Fold together gently. Sprinkle with fresh chives, drizzle with a little olive oil, and add extra grated Parmesan on top. Serve the salad warm, ideally as soon as it’s ready.
