  1. Heat the olive oil with the butter in a pan and sauté the garlic, the cherry tomatoes, and the anchovies, pressing the anchovies with a fork until they melt.
  2. Add the grated tomato and stir regularly until the sauce becomes rich and glossy, about 6-7 minutes.
  3. Meanwhile, boil the paccheri in plenty of salted water for 1-2 minutes less than the time recommended on the package.
  4. Drop them straight into the pan with the sauce.
  5. Add the basil and a little of the pasta cooking water and stir so the pasta becomes glazed.
  6. Sprinkle with freshly ground pepper and remove from the heat.
  7. Add 2 tbsp grated pecorino, stir, and serve immediately, garnishing with extra basil and grated cheese.
